Abstract

A new method based on the response surface methodology (RSM) was developed for optimization and modeling of extraction and stabilization of phycocyanin which is a majority blue protein pigment of Spirulina platensis. The RSM method, based on the Composite Plan (CD) of the second degree allowes to study three variables at three levels to obtain the optimal combination of extraction and stabilization of phycocyanin. According to the response of 3D surface, the optimum extraction of phycocyanin is reached in the special conditions: pH = 5, temperature = 5 °C and compression ratio = 60% stabilizer / 40% solvent with an experimental value 80.36 mg /g DM.
