Caractérisation de la chair de Solen marginatus, extraction de polysaccharides antioxydants et étude de leur effet sur la conservation de filet de daurade

This work is a part of the recovery of a bivalve species 'Solen marginatus' which is abundant in Tunisia but is still scarcely used until now. The determination of the physico-chemical composition of the flesh and the shell of this species was realized, followed by an extraction of polysaccharides from the flesh. Antioxidant as well as antibacterial activities were detected in both polysaccharides’extract and fractions stemming from their purification. After that, the effect of the injection of these extracts on the preservation of sea bream fillet during refrigerated storage was examined. This injection decreased the rate of proteins’ and especially lipids’oxidation and thus contributed to the improvement of the preservation.
