Pour une meilleure valorisation du sandre (Sander lucioperca) en Tunisie : étude des variations saisonnières de sa qualité biochimique

Production of pikeperch (Sander lucioperca) in Tunisia overpasses 220 tonnes/year, including the country among the main producers. Nevertheless, the local commercial value is the weakest in the world, which reveals that the resource is not optimally valorized. Objective of present work is to study seasonal variations of quality of pikeperch produced in the reservoir of Sidi Salem to characterize the nutritional specificities, allow product labeling with the nutritional fact sheet et provide recommendations for improving valorization. Proximal composition and indexes of lipid quality attribute excellent nutritional properties to the product. However, considering the biochemical indicators of healthiness, it is recommended to restrict the valorization by transformation or exportation and, also if possible, resource exploitation to the winter period.
