Abstract

The quality of fish is a major concern for the farmers, the processing industry and the consumers. This work studied some quality characteristics (colorimetric, freshness, TBA) and in biochemical composition (protein and lipids contents) of samples of sea bream (Sparus aurata) from 3 aquaculture stations of the northern region of Tunisia. The principal components analysis (PCA) of all studied variables (colorimetric indexes as well as the different results of biochemical analyzes) showed that the specimens from the station C seemed to have a better quality according to their lipid and protein contents which were the highest, while the TBA index was lowest compared to the values reported for the fish from the two other stations. The colorimetric indicators also confirmed the existence of differences in qualities between fish lots.
