Enquête sur l’évaluation du comportement des consommateurs par rapport aux produits de l'aquaculture en Sicile

The development of aquacultural products is strictly dependent on the consumer, its preferences and appreciations. For this reason, SecurAqua project has planned a study to assess the preferences of the consumer than the products of aquaculture. The aim of the research is to investigate the behavior of consumers towards aquacultural products in Sicily, and even to understand and to evaluate the preferences, behaviors, perceptions, the degree of information about the legislation on labeling, through a strictly scientific method . According to this aim, we have done a sample survey on families living in Sicily (eligible provinces) through direct interviews (face to face). The multiple correspondence analysis (MCA) has identified the profiles of families. One respondent between four eats fresh fish at home two or more times a week (every day 9.5%) and 46.7% eats it once a week. The different species of fish most frequently consumed are sea bass and sea bream. The families generally buy the fish at the fish market (41.3% of cases). Only 3.3% of respondents correctly know the rules on labeling of fish sold in bulk. Overall, 93.5% of respondents consume aquaculture products, at least once a month, 55.8% at least once a week. In some cases, the farmed product is considered the same as the wild product. It is possible to identify three profiles of consumers of aquaculture products by the frequency of consumption (low, medium, high consumption).
