This study permit us to note that lipids are stored unequally in the body of sardine: Sardina pilchardus (Walbum, 1792). So these fats are more abondant in viscera than in flesh where they are better represented in red muscles than in the white ones. Then the most great quantity of flesh lipids is located at the skin level. The results of this study could be useful for transformation industries of sardine.
